Blue/Stilton + B. Linen
« on: August 08, 2012, 12:06:36 AM »
Checking out all the great photos of Blue and Stilton cheeses forced me to get off my ... and shoot my new creation. The starter was made from pieces of my latest Blue and Stilton cheeses then for the first week the cheese was washed every day with B.Linen from my amazing German Brick - (this might be a personal opinion. but it"s based on the fact that nobody I know even wants to be around when I unwrap it).
This cheese is 70 days old, it is firm enough to slice but it's almost spreadable at room temp, it has a very strong bite but very little odor.
Tonight's dinner will be a B/S/B.Linen burger night

Thanks H-K-J, it was the great photos you posted of your 5 Gal make that got me to post that picture.
I am a very bad communicator as you can tell by my lack of posts, but I'm a very good experimenter and I make a lot of cheese, mostly very strong flavored,
