How & at what stage does the honey get added to this cheese?

I really want to try to make this!!

This must be diluted in a spray or something because I would think that honey would be too viscous or thick to just brush on the cheese. Honey is a preservative because the density and sugar would not allow much to grow in it or through it (that's why honey never spoils). And so... if you would just brush honey, the rind will never grow. I would think you can make a simple goat cheese with no PC or Geo. Instead of PC/Geo make a brine with 3% salt and 50% honey. Mix the geo/pc into the brine and spray that on the cheese in the drying room. Repeat that spraying every day or two until sufficient growth has been achieved.  Taste and adjust on your next attempt until you get the honey balance right.  I imagine you are looking for notes of honey, not honey flavor or overwhelming honey feeling. I can give it a taste and let you know... I know who sells it in the area.
