Mary Karlin's  Artisan Cheese Making at Home is another of my "go to" books.  Lots of inspiration in those pages.  Just started a a half size version of her honey-rubbed montasio yesterday.  I just harvested 81 lbs. of honey and ran running for that recipe, having wanting to make it from the first time I read the title and saw the photo.
