Just made and waxed my first hard farmhouse chedder about a week ago, and am now about to make a Parmesan. is it ok to store them close (same box) together to ripen?
Thanks David

If you waxed the Cheddar, it doesn't need to be in a ripening box. The Parmesan can stretch out and relax, enjoying the box all to itself.

Let's ferment something!
Bread, beer, wine, cheese...it's all good.
