Let's ferment something!
Bread, beer, wine, cheese...it's all good.

Today I tried Fromager d'Affinois Brebis--a sheep's milk Bri.  It tasted like...well, it tasted like someone let the sheep pee in the milk before they made it into cheese.  I wonder if this particular wedge I have is just old and that's the ammonia, or if that's just the flavor of this cheese.  It's different from ammonia I've experienced in other cheeses...more pee like.

Also, someone at the store mentioned that it is common to eat a specific kind of almond with Bri.  What's that about?
