My first make with PLA, using Pav's basic tomme recipe in basket molds. I had one on Thanksgiving that was delicious, like a Meunster with a bit of bite. My sweetie wasn't impressed eating it on crackers, but I put it into her egg sandwich the next day (with rind) and she loved it. In the weeks since a greater variety of colors has developed on the second cheese. It's getting good and stinky since I have it in a much smaller minicave that raises the humidity.
Is this the moldy fun I should expect with PLA or have I developed some rogue strains? The side is a bit browner without the flash, but there is bright yellow in the low spots.
