Brie Flipping Epiphany at 3am
« on: April 22, 2014, 11:14:35 AM »
I could not sleep and was up at 3am.
I was on a non cheese forum that I frequent and someone asked for suggestions on what possible uses one might have for a stack of old CD's

I grabbed a CD case from the shelf and opened it to remove the CD to get some inspiration to solve his dilemma.
After removing the CD from the  press-fit well  in the case-I had an epiphany.
The plastic molded well would be the perfect size to stabilize and turn/flip my cheeses.
I ran down to my cave and brought up a 4 1/2" mold and voila-perfect fit.
I am frenetically dis-assembling all my old cases at this very moment.
One on the bottom- cut some cheese mat in the round to friction fit the ID of the mold. Placed the mold on the CD case. dropped in the cheese mat.
Will be making Brie this morning.
After the curds are placed. drop in a top/covering round of cheese mat. and place another CD case over top. The sides will stabilize the mold so no soft curd can escape and it will be a very simple matter to flip -very compact(see what I did there :)) and even has recessed sides for whey release and a pre-drilled center for drainage.
As you can tell-I am beyond excited.
It has always been the most frustrating part of the process for me.

Perhaps others are already using these old cases for this purpose-but it is new for me.

if he is using a draining mat between it and the cheese would it matter as the cheese is on the mat, but not on the plastic??

I am comfortable with the intermediary layer of food grade cheese mat above the CD holder. However if someone were saving the whey then I would agree that it may not be the best idea in the absence of a critical evaluation of any chemical leaching.
