Mersey Vale Cheese Making Recipe?

Here in Oz we have a cheese called mersey vale it has a very cheddery flavour and is very crumbly but moist and smooth.

Any ideas?

Your description reminds me of the Caerphilly recipe I use from Karlin's Artisan Cheesemaking book--adapted for goat milk, in my case
before goats, store bought milk = chevre & feta, with goats, infinite possibilities, goatie love, lotta work cleaning out the barn!

OK, I have found many different recipes here for Caerphilly.

I guess a mix of Meso culture eg MM50 and Flora Danica will give the desired results.

I might give it a go this weekend so any additional comments will be appreciated.

I'd remembered my recipe source wrong--it was 200 Easy Cheeses.  I love this cheese.  Smooth mouth feel and has a taste a little like a creamy medium cheddar.  I used equal parts of MA 4001 and Aroma B.  I think the Aroma B gives that creamy tasting profile--I've used it in Wensleydale as well, and cottage cheese.

Seems like they do alot of variations on cheddar style cheeses.  which one are you you trying to recreat?

I realise this is an old thread, but hopefully something may have happened in this time. Did you ever work out a make for Mersey Valley cheese? I'm a big fan. I'd love to make something similar.

Have you ever tried the Mary Valley cheese from Aldi? I'm assuming it is just Mersey Valley cheese with a different label. It tastes the same.
