Well I found that doing a four gallon and a two gallon was very easy.  Just half the recipe for the 2 which was a lot easier than trying to measure out stuff for two threes.  Once I had taken care of draining the 2 gallon it was easy to do the four gallon and then mix the curds together in one pot, the smaller of the two.  Then just treat it like the recipe calls for as if it were one all of the time. ;)

I am thinkin of makin an 8 gallon batch :P
That would mean one long day of cheese making, that would Shirley ( ;)) fill up my SS mold

That's the spirit!!  The bigger the better, as far as I'm concerned, as I hate waiting that long for something unless it's going to last.

Few days in the cave and the outer crust is forming nicely.  Should be ready for piercing around the 1st of February.

This, 7 cubic foot upright freezer by Igloo.  Got it at Best Buy and added a Johnson Controls analog thermostat.  Even with the thermometer/hygrometer it was all under $250.00 and it maintains a RH of 85% all on its own.
