reading expiry on Abiasa packets

I just learned today how to read the expiry on Abiasa culture packets. Of all of the culture packages i have, these don't have any obvious expiry dates. I just never thought to ask till now.
So on the packet where it says Lot #, this is where you find the expiry date. The first letter represents the year, the second letter represents the month and the next two numbers represent the date. According to Glengarry Cheese in Ontario the last number is not significant to us! ??
One Thermo C packet i have reads...Lot # KG214
K would be #11 in the alphabet  = 2011
G would be #7 in the alphabet  =  July
and of course, 21 would represent the day.
After understanding the code, Glengarry and i discovered the expiry date on this particular package reads July 21st, 2011.
I did not start making cheese till July 30, 2011! :(
Of course, if you see your culture in the packet clumps together and is not dry and runs freely, then, those contents have been ultered,damaged or expired. Being a newbee, i am not going to take a chance. I have been told that if the expiry date isn't too old, then use a little more than what the recipe calls for. I am just not that experienced...yet
