Bulk culture issue

I made 2 "bulk" culture from dvi's: MM100 and FD.  I've done the MM100 before, and it turned out as expected--a consistency kind of like yogurt with a pH around 4.5.  The FD, however, is more like a thick slime ( a spoon pulled from it draws out a long strand ... like boogers...) and not yogurt like at all with a pH (after an additional few hours at 88 F) of 4.8.  This seems odd to me and indicates that it got contaminated with something else.  I've never done FD before though, so perhaps this is normal.  Opinions?

At what temp are you ripening them?  FD can go below 4.8, perhaps give it more time.

I've done Aroma B before, not Flora Danica. The culture mix is very similar. I had no problems. I can't answer to the descriptive result you achieved though. ::) It does sound like something else crept in there.

I followed Sailor's photo essay, observing the pH points.

As with many other things in cheesemaking, patience was needed.  After a few more hours the texture was about right.  I didn't check the pH because I had already put away all of my equipment.  I presume it was closer to 4.5... though the whole "slimey" thing was a little disturbing.
