I have created CHEESE!!!  yes, I did it.  my aging cave has been going for a few months and I've recently been able to open a few up, and I cannot believe how successful it is!   they may not taste or have the same texture as store bought cheese, but then again, neither does homemade bread, cake, etc....and right or wrong, these babies taste super!!   the family is eating them right up. 

I have made gouda, cheddar and colby.   all from raw goat's milk.   the gouda is drier than store cheese, but tastes wonderful.  the cheddar is getting almost too sharp for burgers or snacks, but good for cooking.   the colby that I just opened, first one, is amazing!!   

so since some of these cheeses are 'done', can I move them to a reg. fridge to keep them from aging and getting mroe sharp?
