Adding Meat

While in Germany, I purchased a smoked Gouda mit Schinken.( small chunks of smoked salted ham in it).  I have never seen this topic discussed anywhere, but does anyone know how to make something like this?  My wife would love this stuff and it's cheaper than bringing her with me next time I go. ;-)

Just saw this catching up on posts after being off-line for a long time. I know some one who adds small bits of salami to her Goudas; she puts them in when she molds the cheese.
