Hi all,

Hope you all fine and well
Just quick inquiry regarding the tablets

How much milk do I need for one rennet tablet!!

How to easily calculate the rennet tablet equivalent to litters of milk!!

I used to have a box of Danisco brand tablets - it said one tablet would set 50 liters of milk. You can cut/break the tablets accordingly (e.g. use 1/4 tablet for 10-12 liters).

It depends on the tablet. What does the manufacturer say?

The only thing written on the the tablet is the letter (H)

its small thin tablet the size of 5p but thinner

Hmm, if you can't find anything else about the strength of the tablets, some experimentation may be in order. For most hard cheeses, you should use an amount of rennet that makes the milk begin to flocculate/coagulate around 10 to 12 minutes. If it happens much quicker, you've used too much rennet; much slower, not quite enough.

The ones I got from cheesemaking.com seemed to work pretty well using 1/4 tablet for 2 gallons of milk (~8 L.)  Since the tablets are only scored in quarters, 3 gallon makes become difficult to rennet.

That said, liquid rennet is much easier to control and less likely to develop off flavors with longer aging.  You'll be happier in the long run with liquid rennet.
