That brings up a nagging questions i have harbored for a while.

Do i need to be concerned about humidity for cheeses i have waxed?

No, as long as they are sealed and no pin holes, you'll be all right. Mold might be able to grow on the wax, as mold can grow anywhere, but it won't hurt the cheese.

Yeah,   I'm pretty sure it was in the right ballpark, about 90% humidity. 
I actually have 3 hygrometers,  (wine cellar, Cheese cellar, Cheesecave)
I put all three in the fridge and all were within a variance of about 5%
I think it is due to the type of freezer it is..  It has the coils INSIDE the freezer compartment.

I'm thinking of putting in an exaust fan.


This is the same kind of freezer WE got today... wow...

I'll post a pic later, but essentially it's set up the same way.. That's pretty strange.

You might want to check out this digital hygrometer. As long as you are drilling holes in the freezer, you could try running the probe through the wall and be able to read the humidity from outside without opening the door.

That certainly looks interesting, however with 95-100% humidity,  I need to open that door occaisionally.


Let me know if you find a hygrometer controlled power switch.  I am looking for one of those as well.

I've found them but they cost $130 for a humidistat. I use an orgeon scientific unit that transmits to a base the temp/humidity so no need to open the door.
