Cheest Shots-Chaource

I have decided that Chaource and Tallegio are probably my favorite cheeses, and am making both now--in addition to Buttermilk Blue, Blue Gouda, Vodka-infused goat, a bizarre Morbier, Reblochon, and several others! I'll keep you posted. I used Yoav's recipe with the addition of 16 ounces full fat raw cream.
Darn, another cheese meltdown--ahh, perfect fondue.
