Hi all,
Just had a Welsh cheese called Red Dragon. It is a white cheddar with mustard seed and brown ale that is aged for 3 months. It was great with a Samuel Smiths on the side. I may have to start working on cheedar because this was great
. Anyone had this cheese or attempted to make?

I have to say that that looks real good. I noticed that they also used mustard flour?
Anyway might have a play with this, as I love mustard.
