New cheese maker here. I have made 5 hard cheeses so far, but have not tasted any yet. Two cheddars, a parmason, Romano, and a Gouda. They all look good, but have many months to age. First make was 3/15/13. I do not have a PH meter yet, hoping that will not be a big problem. Have also tried mozzarella, not good, and ricatta which was OK. This board looks like it will be a great help. This is my first post, and will try to post a picture of my Romano. I was very happy with how that came out. One month old at the moment.

Welcome to the forum, Spike.

Looks like your first cheese for tasting will be Gouda...unless you decide to make an earlier-maturing style than that.

Let's start you off with your first complimentary cheese. ;)

Welcome to the Forum from Dallas!

For a quick return on a hard cheese see JeffHamm's Caerphilly. A cheddar type that is ready in 3-4 weeks.

Thanks for the warm welcome guys (I think). Yes the Gouda will be the first tasting. Was in Dallas last week for my daughters graduation from UTD. On the way home I stopped at Whole Foods in Austin and picked up a bunch of sample cheeses to see what I like. I am not very sophisticated or experienced when it comes to cheese yet. I did have Caerphilly on the list to make, but was not impressed with the sample I picked up. Really enjoyed the Parrano, so I think that is up next. Already found a receipe for it here!

I have read that you can give someone a cheese with the thumbs up button, but I do not see that option. Using an android tablet. What am I missing?

On the left side of the page, under their avatar, under their location, under their number of posts, under an entry that's labeled "Cheeses:"...there is a bracketed "Thumbs Up". Click on that to award someone a cheese for great advice, admirable cheese endeavors, clever use of technology, good humor, or anything else that you believe warrants a special achievement acknowledgement. You can't award multiple cheeses within a given timeframe (no stuffing the ballotbox ;)) and you can't award yourself cheeses.

Hmm, must be a quirk/bug with using your Android Tablet, works fine for everyone else including me on an iPad.

On Boofer's it should be right under where it says: Cheeses:137 but above the "contemplating cheese" line...

Works (and displays) fine with my laptop and on my iPad....

Cant imagine it being a setting thing...

As you put it: "Stranger than fiction"  lol

As a woman, I kind of cringe when I see the word "porn" and I've been encouraging forum members to consider using the word erotica instead since porn degrades and objectifies it's subject matter and  erotica celebrates it.  I can handle cringing but prefer not to, especially here where there is a lot of mutual respect among members and it feels like such a nice place.   :D

If you are logged in, then to the left of a post, below the posters' name, there is a small section called Cheeses: 3, this is a counter for how many Thumbs Up +1 less Down -1, that person has received, a rough measure of their credibility.

After 5 posts, Users can give other Users (not themselves), a Thumbs Up or Down at any time on any post by just clicking on the button below the Cheeses: 3 counter.

There is no financial reward, just an Attaboy/Kudo's sytem. So if you feel someone has been helpful, give them a thumbs up, if you believe they have been distrupting, give them a thumbs down.

Boy, glad that's been resolved!  ;)

Just an additional note: the "Thumbs Down" option was removed because some jerk early on was scrubbing Sailor's cheeses off.
