I opened my spiced Gouda today at 2 months old. Cut 1 half in half resealed 1 half and 1\4 of the 8lb wheel. I am very happy with the out come it is nice and creamy, looks like a lot of cumin but was perfect amount for the flavor they imparted. I thought it needed a little more salt but no one else thought so. All in all I don't think I would change anything.
