Easy curing

Hey all,
I posted earlier in another part of the forum but was notified that I was in the wrong place. My brothers and I have just set up our curing chamber (http://artisanbros.blogspot.com/2013/04/curing-chamber.html), and are trying some wet cures right now. I think we are almost ready for the dry cures. We have thought about doing some pastrami or some ham but they are all a bit too difficult for us right now (especially getting a good ham from the butcher). I am wondering if anyone has an easy salami or other meat recipe they wouldn't mind sharing?

Another good option for a beginner is to buy some Mortons Sugar Cure , there are recipes right on the package.

It is an old time way of curing hams and bacon that people have been using for may years , very simple.

You can find it in many grocery stores , it is basically a mixture of salt sugar and curing agents , nothing else needed , just time.
