Cheese Cake-Cheese Shots

Couldn't help myself--shot this pic just before a cheese tasting I had this month. I've been experimenting with cheeses this year--from top to bottom:
Aged Chaource
Humbolt Fog
Jack with Cocoa/Coffee Ring
Pecan Smoked Colby
Asiago with Red Peppercorns
Aged Goat with Citrus Vodka Rind
Romano
This is actually the best time of the cheese making process--recording the memories.

Gorgeous cheese cake, Brie! All very imaginative and intriguing.

How did the tasting go? Any flat-out winners or losers?

Let's ferment something!
Bread, beer, wine, cheese...it's all good.

Hi Boof--how are you? Tallegio was probably the winner--it's not in the cheesecake because it is too soft to stack. Another was the Smoked Blue Gouda I made. It has P.Roqueforti in it; yet no veining because it isn't poked. I thought it would be a good candidate for a light smoke; which I did with cherry. Very, very good. The Irish Cheddar was popular--I soaked the curds in Irish Whiskey, then washed the rind with the whiskey for several weeks. The Goat with Lemon Vodka rind was also very nice.

I'm doing well, Brie, thanks for asking.

Here you are doing wonderfully imaginative things with your cheeses much like Kathrin (Tiarella) and I'm still trying to learn the basics. :P

THOSE look like amazing cheeses!!!!!  A cheese to you and I'd make it five cheeses if I could!!  I am SO impressed!!  Those look great and such creativity!  Did you see that webpage that had cheese wedding cakes?  Those were beautiful too.  Don't remember where it was but I bet googling cheese wedding cakes will get you to it.

Oh, and Boofer.....I may be creative but make no mistake, I am very much learning the basics still.  I just don't worry about getting things right so it results in different cheeses that look creative.   ???

Man, beautiful. Take a cheese.

I've been curious about that Jack method, how'd it turn out?
