Trying to decide, and looking for opinions.... I still feel like a novice with about 50 cheese makes. I am going back and forth in my mind about signing up for a class with Ivan Larcher. I am concerned that it might be over my head, or not what I am ready to learn and assimilate as a home hobby cheesemaker. The price on the class is a lot for hobby. On the other hand, learning from a pro is rather a nice opportunity.
Thoughts, anyone??
