Hi.
Can someone explain to me why soft cheese moulds are tapered? Thanks in advance.

I think it is to offset slumping of the soft cheese. I only have straight sided molds and my cheeses slump considerately .

I think I have it. You can stack them on top of each other when pressing. :-)

It also helps with demoulding - they cheeses fall out more easily.
