Great video! Now I know why I was raised to put grated cheese in almost everything. Fromaggio (cheese) is an ingredient in all my soups and pasta dishes. A nice aged Provolone is one of my favorites. It is a pity most Americans have never had real provolone just that rubbery plastic stuff they sell in the grocery stores.

That was a really great clip.  It has really inspired me to make some provolone today.  Thanks for posting it.  Loved those shape,  if only.......

What do you think the finished product is being wrapped in in this video.  It looks like plastic.  is that what there aging it in?
