Cheesemaking Classes

Starting immediately, we would like to extend the opportunity to anyone who is interested to take cheesemaking classes in our facilities in Central Indiana.

We are offering 1-day cheesemaking classes, during these courses we will produce the simple Alpine style cheese known as Mutschli. This is an easy cheese to make, and a good introduction to the world of Alpine cheeses.

We have two options available, 1 is a morning course geared to hobbyists and home cheesemakers who would like to learn the basics of alpine style cheeses. This course will cover the making process, brining, and proper aging.
The other option is a morning and afternoon course geared more toward the professional cheesemaker or dedicated enthusiasts (although it is, of course, open to anyone) This course not only covers the basics of cheesemaking and aging, but also covers more complex aspects such as targeting and isolating desirable bacteria from raw milk, safe production of whey cultures, and how to customize an alpine cheese make for specific results.

These courses are open to individuals or groups up to 7 people, and we offer 3 courses per week. The introductory/hobbyist course is $90. The Professional course is $150

David, e-mailed you.  This looks great.  Just a suggestion - in case you come to this first - you might want to provide contact details in case others from outside the forum want to attend, or members have some more questions that might more expediently be answered via other than PM.
