Not So leaning Stilton of Eccles Take 3

Well I was busy last week making two more stiltons. 3 gallons of milk resulting in 2 x 900g cheeses.

They seem a firmer this time and going a nice shade of blue.







Also made a caerphilly type cheese though being made in Lancashire it should be a Lancashire another 900g wheel. I have a tomato and Damson chutney (from the damson gin) ready for this one as long as I haven't eaten the chutney.  ;) ;)

I think I need to build a press this bug has begun to bite.

It's looking to me like you've cracked it. Have a cheese for that.

They look better this time and are firmer as well. Definitely need a press though, I need cheddar in my life. Mind you one of my kids to a like to applewood smoked Cheddar so I may have to build a smoker as well.  ;)

Is this a bad time to mention that there's a 5-pound cheddar in my press right now then? That was yesterday's attempt. I'm planning to cloth-bind it and age it out for 15 months or so.

Like you, I want to try smoked cheddar. But smoked stilton H-K-J...you're really on to something there! I might be asking the engineer in the house for a cold smoker.

Smoked Stilton thats a new one on me, how does the smoke sit with the blue taste.

I opened a piece that was smoked 3 months ago, my wife and I were quite impressed ^-^

Two weeks old now and they are now developing a whitish mould over the top of the blue mould. Is this alright?





I also pierce them today as well. They seem to be keeping their shape and not sagging like the last 2 so hopefully in a months time one will be ready (for my birthday).

 :)

white mold is normal, you might even see some brown/tan molds.

Oh thanks for that. Just being cautious as my first attempt had slip skin and the second had signs of slip skin and also Brevibacterium, it had port salut qualities and also that of smelly feet.

Slip Skin again.

Left them for the weekend and they were fine, today they are disfigured lumps of puss (well runny cheese).

I have cut one open and there are great big area's of oozing cheese. The other isn't much better.

I fear that because i left them in plastic boxes the humidity was too great over the weekend, and perhaps the temp was to high at 12.5C.

However the Caerphilly has turned blue in places so I have scraped it and washed it in brine.

Combined with the Mozzarella fail as well I am not having much joy in this cheese making Malarky. At least when I brew beer I get something pretty decent.  >:( >:(

Perhaps you need to make another Caerphilly to rejuvenate your mojo?

Brewing beer next week 60L of my Hoppy Odd Job Pale Ale.

The caerphilly is in better condition today after putting it in some brine and letting it dry overnight, So I think that will get eaten at the weekend, only problem the Damson Chutney I had made has been eaten  >:D

And such is the nature of making your own food, in the same way that the tomatoes are never ripe when the basil is at its best.  ;)

Its a clone of St Austels Proper Job IPA but isn't an IPA at all very American with lots of cascade willamette and chinnock. Lovely and citrussy. I also add wheat malt for head retention (I am a northerner after all) and oats which adds a little sweetness and makes it wonderfully smooth.  :) :) :)
