Hello from Upstae New York

Hello,

Been making cheese now for about 3 years. Primarily cheddar, blue and camembert. Going to try a new one shortly. Just looking for some info on how to fine tune the product.

Hi,
I am in Southern NY.
Best part about making cheese is the fine tuning
