16 gallon Bayou Classic information?

I have too much milk! The cows keep getting ahead of my cheese making capacity so I am looking at getting one of these:

Does anyone have any experience with these pots good or bad? I use a wood cook stove for heating and put my current pots directly on the stove off to the side so don't have problems scorching or anything. I know I will have to upscale the rest of my equipment also but like the idea of watching one batch of cheese instead of multiple pots at one time. I would love to hear from others on this idea as I don't have a lot of experience with larger batches yet.
