I've had cheese similar to that before and it's great !
That is along the lines of the one I was trying to replicate when I made this one , mine didn't get very blue , but only because I didn't pierce it very much , and of course , I didn't age it as long as I could have , was a little too anxious to try it.
An interesting side note , I used to live in a town called Harrogate too , in Southeast British Columbia.
