Humidifier HELP needed quickly!!
« on: March 01, 2014, 11:28:30 AM »
I just recently had 2 of my caves (large coolers) die.  They both kept the humidity at about 85%.  My new one is not doing that. The humidity is only 55%.
I have a couple of Taleggio types aging and would like to quickly raise the humidity again.  Is there a small humidifier that I can purchase to do this?  My
cooler for the 'stinkies' is only 18 inches wide and deep and 3 feet tall.   HELP!!!

Andreark, I have 3 of these, and highly recommend them.  Our own John@PC's new company, and I'm very proud to testify to his products - excellent.  No other connection besides a happy customer.

Arnaud,

Thanks so much for the suggestion.  I just ordered 2 cubes and extra wicks.   I ordered an extra one for a dedicated frig (40-45 degrees) I have in my garage.
What a wonderful help you and John have been.  I am so excited!!

I think these will actually control the humidity better than the old wine cellars did.  I had thought occasionally that some of my cheeses would benefit with
closer controls.

Thanks again,

andreark

Arnaud,

I know that you and John don't need more cheeses, but I would like to give you each one and I don't know how.  I looked for info but didn't see anything.  I would also like to know exactly what John's member name is.

Sorry to pick on you so soon,

andreark

Andreark, fantastic, glad I could help.  No worries on the cheese...if you want to give John one, he's John@PC.  You go to a post of his, and under his name give a thumbs up.  Cheese to you, as I wasn't aware he had extra wicks!  Thanks much!

Good luck, love to hear how it all turns out.

Arnaud,

I gave BOTH you and John a cheese each. (I think.  I didn't get any feedback from these actions.)  I will start posting photos of my cheeses as they are finished ripening.   I have some Camemberts and Taleggios aging.  The Cams will be ready in a week or two and the Taleggios a month after that.

Next, I will ONCE AGAIN, attempt an Epoissses.  I have tried these many times without success.  They turned out just ok, not fabulous.  AND FABULOUS IS ALL
I WILL ACCEPT!!  I also promised my boss another cheddar.....But the last cheddar I gave him aged for 18 months.  (Yes, it was worth the wait)

Thanks so much again,

andreark

Thanks Arnaud and andreark for the cheese and especially for the nice comments.  When I got hooked on making cheese I had the same problems and the humidifier was one of the first products we developed.   Hope it helps to correct your "arid" cave conditions  :).

Hey John,
A couple of questions about your humidifier.
Is it okay if the unit is at the bottom of the fridge or is placement within the fridge unimportant.
Also is there a problem if the pan runs out of water besides loss of humidity ie. will the compressor burn out or something?

I don't believe location is that important.  The fan is on the top and blows upward, so maybe there's a slight advantage having it on the bottom.  No problem with the compressor but when the pan "goes dry" the humidity could drop pretty fast under certain conditions.  The controller has an  audible alarm that can be set to alert you of low (or excess) humidity.  After awhile you'll figure out how often you need to refill - usually once every one or two weeks works.

Thanks John,
I think this is going to work perfectly!  Can't wait to see it.

Oh and a cheese to you for all your good service.
