Storing milk before skimming cream
« on: March 22, 2014, 01:38:23 PM »
Hi
I'm new here and have a question that I'm hoping someone can answer as I have read different advice on the Internet. I am about to start making cheese for the first time and have just bought some raw milk from a local farm. I'd like to skim off some cream first to make some butter if I can. In what temperature should I store the milk so the cream rises to the top?  And how long will this take?  I've read 24 hours and 48 hours.

Thanks for any help you can give me. I'm sorry it's such a basic question!

I always put my milk in the fridge and leave it at least overnight before skimming the cream. I don't think you will see much gain in the volume of cream by waiting more than 12-18 hours.

Hi, I have been milking cows for about 3 yrs.  Depending on season, at least 24 hrs to skim.  The longer you wait, closer to 48 hrs and esp in the spring and summer when the grass is at its best, the thicker the cream will be and the better you can skim it.  Good luck!
