OK,  Long time no cheese!

Going to keep this brief,  'cos it late. 

Made up a batch of the gorgonzola from Caldwell's book 9 weeks ago.  I went with this recipe as I wanted something a bit creamier and lighter compared to the stilton recipe I've done previously.

So 9 weeks on and I figure its time to cut and taste!

Was a bit worried as it's been a bit white and furry for most of its life, although the pic doesnt show that too much.



Also,  thinking back,  I cant recall re-poking to keep the holes open, so was slightly worried there would be too much blue



Turns out there was some decent blue going on.   8)



The moment of truth,  the taste....!



Tastes great,  my best to date.
Still quite mild, and the blueyness is not overbearing - well balanced.  Good texture, creamy, smooth,  nice!

Using the different recipe has taken me in the direction I wanted. 

I've left a bit in the fridge to eat soon,  and vacc-ed the rest and put that in the fridge too.
I had to stop myself this evening otherwise I'd have eaten too much!

That's a great looking cheese, and by the sounds of it, a great tasting one too!  Well done.  A cheese to you.

Well done. After my blue mishap I am as jealous as .....................

I have just brewed an excelent Pale Ale which would go nice with that   :D

awesome!AC2U that looks a lot like mine when I finally made a cheese I was proud of, I followed H-K-J's style and recipe....somewhat. I have put a hunk way back in in the cave a vac bag hoping it will age out so I can see how it might improve in flavor...hmmm hard to imagine
