ageing for my grana-romano

i have been ageing my Romano for about 4 months now and i am wondering if ageing it say to Christmas would really help the flavour or not?
If cheese was as easy as boiling an egg 8)

Yes.  I wouldnt open any grana style before 12 months.
Amatuar winemaker,baker, cook and musician
