500 grams is equal to just 1.1 pound of cheese. That is the average yield from about 1 gallon or 3.79 liters of milk.

Just noticed this.

He's in Canada , so it's 4.54 liters to our gallon.  ;D ;D ;D

... and speaking of Gouda molds:  Earlier in this thread I mentioned we wanted to stock some Kadova molds and were trying to find the best source.  Well, details have been worked out and we're expecting first shipment from the Netherlands within the week.  I don't want to hijack this thread any more than I have so I'll give more details when they come in a separate post.  Of course, I'll need to do some "testing" first  ;).

Congrats, John!!! I love Kadova moulds. I have 2 of them. What makes them stand out is the shape of the lid, it's curved. I don't use the netting (cheese cloth) that come with them though, that's a battle a cheesemaker can't win  ??? I might splurge one day and buy their manchego mould. I'll check out your website when the time comes.
