How long after I pierce should I wrap a Stilton?
I have two that have a wonderful exterior blue going on. I pierced yesterday at about 2 weeks. The interior tasted great, creamy and complex.

Hi steff, I have never wrapped a Stilton, I know they do before shipping. so, don't really have an answer for you.
what I have done is vacuum bag when I have decided the veining is where I want it, usually at 6 to 8 weeks old.

that it does, stops the PR until you open the bag again to eat it, once in your fridge the PR will begin to grow again ^-^
