My Beaufort and some questions

Hi all,

this is my first beaufort(or something similar.... :-[ :-[) and I don't know if I'm doing something wrong or not, you can see the photos and give me your feedback??

Two firsts - today. And the last with 4 days.....


I have done the recipe of "Marinero Con Queso", thanks Marinero for your great recipe and instructions, I started to do the cheese last 05 abril and I have doing the following:

 - 80% humedity always, maybe sometimes up to 85%
 - Now is in the cave at 14-17ºC(57-62ºF), in my storage room of my flat, it have been 5 days there, before it was at 8ºC(47ºF) another 2 days...

what do you think about my cheese??

Can you give us an update on your Beaufort? It looks pretty good from your pics back in April.

yes please update if we are not to late, the cheese looks great at the time the pix were taken.
