I look forward to hearing a tasting report.  I can't detect any lipase action in this make, but I used very little, and it is a washed curd cheese, so that could have washed much of it away.  I might try a tomme type cheese with a touch of lipase and see where that goes.

Had the last wee piece of this tonight.  Parting is such sweet sorrow, but tasty too! This will be made again.  Was a very nice result.
