A Victorian cheesecake

I made this a year or so back, part of a web competition.

It was a nineteenth century cheesecake according to a recipe in a Victorian cookbook. The idea behind it was pretty simple - cheese curds, with added spices and flavours, in a pie pastry. Very nice conception: it gets sweetness not just from a spoonful or so of sugar, but from lemon juice, currants, and of course the lactose in the curds.

 As it's from a Victorian cookbook a little bit of guesswork may be involved but it's basically pretty simple.
