Stacking cheese in the cave?

I've seen hard cheese stacked one on top of another when stored, but can you stack when aging? I know it's not a lot of weight, but can acheese be affected by this when aging 6-12 months?

No. Only viable solution is to send some to me immediately. I will consume it put it into long-term storage for you. (I say long-term, because the fat cells in my body are exceedingly persistent.)

I would think if you rotate and turn them occasionally , they should be fine.

Those are beautiful looking cheeses , and nice labels as well.

Can you show me a pic of the mold you use , or even a link , I need one of those for my Gouda.

A cheese to you for those !

Those are shaped with a 1.5-2KG Kadova mould. I use cheese cloth for the first 2 hours of pressing, then I finish the last 2 or so hours with the Kadova netting to give the wheel a seamless look.

My Goudas are made with 17.7L of milk (16L 0% + 1.7L 35% un-homo) and it makes a wheel of 3.25" thick with that mould. Nice and meaty.  I bought it at Glengarry's:

Once you vac-pack them it is OK to stack them, I stack my vac-packed cheddar bricks because of lack of space in my cave and they are coming along just fine. if it was a natural rind cheese it would grow all kinds of unwanted molds in between the cheeses but is not the case with the vac-pack.

I go three-high for two reasons, space in the cave, and space in the cave.

I put the lightest on top, as I'm sure you are relieved to hear.  ;)
