How long do you air dry your cheddars?

Hello,

How long do you air dry your cheddars?  I have one that's been air drying for 6 days. The sides are nice and dry but when I turn daily the bottom will always have some slight moisture and white spots.  By the next 24 hours the side that was slightly moist will dry and then the other side will get the same thing.

Because cheddar curds lose so much whey between the cheddaring process coupled with the salting of the curds before pressing, mine dry really quick after pressing - I have to wax or bandage within a day, or it starts cracking on me (though not in a high humidity cave).
