Just a quick update - the cheese has been air drying this week and the weight has dropped to 1380 grams. It has been cool and very dry. So time to prepare the cheese and the wax..

Well, into the Cave it has gone - just over 1.3 Kg of Cheese in a pretty red wax coat - 3 months and we will see
