Havarti growth issue (pinkish spots)
« on: August 01, 2014, 01:58:34 PM »
I have a Havarti that is just under two weeks old. I have been aging it in a plastic box in the refrigerator. About a week ago it had a few pink spots which I washed with a light salt brine. Today when I opened to turn it (after two days) there was quite a bit of the same pinkish growth on both top and bottom of the cheese (a week after the first sighting). I washed it away with the salt brine, dried the surface and salted it and letting it sit outside the refrigerator with the top off the box (covered with paper towels) for 24 hours to dry out a bit more. Is this pinkish growth likely natural b.linens? Or is it something else? As long as I monitor it and keep the cheese clean will it still be okay to eat? I am going to age it a total of one month and eat it young. I did not think about taking a photo of the pink growth before washing it away. If it recurs I will take some photos of it.
