Some say pneumatic presses violate the spirit of cheesemaking.

Oh, well, yes, there's that.  Personally, I first footstomp my cheese into its form, then, while it's pressing, I move over to a vat of beguiling pinot noir grapes, and workout.  Doesn't get better.  ;D
