Hi everyone and a big hello from scotland,

 I am looking into getting in to cheese making and I was directed here from a uk homebrewing forum by greysalchamy.

I am building a cheesecave as we speak in preparation.  I cant wait to give it a go as its something the whole family can get involved in and enjoy. Luckly a good friend of mine is a dairy farmer so will supply me with all the milk I will ever need as I have been supplying him with homebrew for the last few years.  ;D

Welcome as well!  I think you will find cheese making a delightful (but sometimes humbling) experience.  There is a bunch of good info here so feel free to learn from our mistakes and ask questions.
