Can I use 1% milk?

Hi all
I have 4 gallons of non UP milk that's skimmed to 1% only. Most recipes call for 2%.
Can I still use it?

Sure. Might produce a slightly harder cheese or you could add a bit of cream to up the percentage to 2% if you're concerned.

Thanks, actually after more careful look it's 1.5% fat - something I've never seen before
