3rd cheese 1st Caerphilly

This is my first pressed cheese. The whole affair was rather hokey, but it seems to work! it is pressing with about 4 psi overnight.

Here it is after being pressed overnight. Total weight is 4lbs 8ozs.

2 weeks in, top started to crack, I think this was my fault, I lest the container open overnight by mistake.

Decided to cut into it for lunch today, looks great, tastes great. the inside is crumbly exactly as I expected, however it is a lot moister than I expected?

Looks like a nice young Caerphilly.
I think they are much better after 4 weeks
