Hey from Arkansas Ozarks

I've been making cheese for just under a year, and I've been haunting a different forum.  Thought I'd check out you guys since I'm always looking for new ideas/solutions etc.  I do pressed cheeses (no moldy stuff please) of the cheddar, jack and manchego varieties mostly with an occasional soft cheese for fun.  Lookin' forward to getting to know a new bunch of cheese hounds.

You are I believe the first one from US State of Arkansas so I just added a Geograhic > USA > Arkansas Board in case you have any local type info.
