Hi all,
This was the second in a series of Cheddars, before I started my 12 month of Cheddar project.  It's amazing the evolution of the Flora that makes it's home on the cheese. This was a 'Banded Brother'  and it looked much like this one before I unwrapped it.

Looking back over my notes this was pressed with the old Dutch Press and the note in the make sheet shows quite a bit of pressure but, apart from 'Wedgie' and 'Son of Wedgie' the rest of the 'Brethren' are pressed with the multi action press.   I think from memory I managed to get about 3 PSI on the cheese and the structure was compact and sliceable but it still had assort of crumbly texture that a Mature Cheddar has...

I have some 'Cave Maintenance' to do this weekend I'll show you all how they rest are progressing.
