I'm thinking about trying my hand at a montasio, and wondered whether anyone has tried the Rikki Carroll recipe which includes a brief washing of the curds (unlike every other recipe I've seen) -- I see that Jeff thought about it several years ago, but wound up going with the non-washed version. Just curious ...
