If your Mould is 8" diameter then it would be 4 * 4 * Pi  = 50.3 Sq"  Not sure where the 73 Sq" came from?

You are right... Don't know where that came from... :-)

I totally agree with you regarding using psi and not weight when talking about pressing cheese. Unfortunately a lot of recipes state the pressure in weight and not psi - and doesn't even tell which size mould was used. Some even mix up lbs and psi as if it was the same - even in published books... One big confusion!

I think that I will use wood for the frame as you have done - even though the system that you linked to looks smart.

Looks like you thought of everything----but just in case---are you using a good water filter ( such as used in spray painting) before your cylinder? If not--you run the chance of dirty water dripping out of cylinder and on cheese---especially as it gets older.
